I checked a book out from the (big kid side) of the library called Pancakes A-Z. They had a different pancake recipe for every letter of the alphabet. We tried some of the recipes in it. This is one of our favorites.
Apple Cottage Cheese Pancakes
1 cup cottage cheese
3 eggs, separated
3 Tbsp. butter, melted
1/2 teas. vanilla
1 cup peeled, cored and chopped apple
1/4 cup plus 2 Tbsp. flour
2 Tbsp. sugar
1/4 teas. salt
In a large bowl, combine the cottage cheese, egg yolks, butter and vanilla. Stir to blend. Add the apple, flour, sugar and salt and stir to combine. In a separate bowl, beat the egg whites until soft peaks form. Gently fold into the batter just until blended. Pour a scant 1/4 cup batter onto hot, greased griddle for each pancake.
Sprinkle with cinnamon sugar. (1/2 cup sugar and 1 teas. cinnamon)
If you're making these for a lot of people, you might want to consider doubling or tripling this recipe. Me and Logan could eat a whole batch between the two of us. Maybe your not as piggie so you could feed more. I just thought I'd warn ya.
